Обнаружил и зарепортил неприятную проблему с выставлением maximumZoomScale и minimumZoomLevel через Interface Builder. Буду рад, если народ поддержит мою инициативу и тоже напишет в Apple об этом :)...в IB не меняют свойств UIScrollView maximumZoomScale и minimumZoomScale. Я указал в viewDidLoad их распечатку и увидел, что ничего толкового от них не получить. Приходится всегда ручками выставлять :
