In a fit of bean-induced frustration, I took a giant batch of cooked black eyed peas and made vegetarian chili, which still lasted me two days but was enough of a spice-up literally and figuratively that the beans became palatable again. Though this chili was good and the beans were extremely economical,...

I made this yesterday and it turned out really, really good. I topped it with some crushed blue corn tortillia chips and a bit of sour cream. The chicken cooked perfectly and practically fell apart when I took it out to shred it. I will totally be making this one again
