A few days ago my daughter asked me to to make her my "triple pork": grilled one-inch thick pork chops, with a pocket slit into the side, stuffed with caramelized minced shallots, pancetta and goat...chance to take a picture. I had some leftover pancetta, so tonight I caramelized some more shallots with pancetta and served them over whole wheat toast with a smear of goat cheese. Excellent appetizer

I cooked it up for dinner tonight: marinate in the fridge for an hour or two with : dashi , soy sauce, sake, rice vinegar, lemon juice, salt, pepper. Then pan fry with olive oil and butter. Reduce the marinade and drizzle over white rice. Ate it all up before I thought about taking a picture.
