This was from my CSA recipe sheet, taken from Bon Appetit. Kohlrabi, peeled and diced. (Be sure to take all the peel off, as it's stringy and not nice.) Radishes, sliced thinly. Pepperjack, cubed. Pumpkin seeds. Lettuce. Dressing with apple cider vinegar, cilantro, cumin, olive oil, salt and pepper. Remarkably awesome, and made two large salads. yesterday op & i grilled some veggie-italian-sausages on the grill. we ate them in buns w/ fresh basil & mustard, and this slaw was a good spicy complement. plus a great way to use up some of these kohlrabis that we got from our csa. 1 kohlrabi, grated 3 radishes, grated parsley, chopped white wine vinegar & olive oil to dress mix it all up, salt to taste

I have two things of kohlrabi . They've been sitting in the fridge for a week, so the leaves are a bit limp. I should use them up soon. What should I do with them?
