This is a Nigella recipe that I've adapted into my own (by fiddling with the ingredients). I let Jon choose what treats I made at the weekend, so this is all his fault. But it is the easiest...one of the girls brought in a tub of Marks & Spencer's Rocky Road (which he LOVES) but he came home and said since having mine on Sunday that he thought the M&S one was nowhere near as good. HURRAY! :
This recipe is veganized from the one in "How to be a Domestic Goddess" by Nigella Lawson. I was a bit put-off when I first read her recipe-- there's no sugar! There's no nuts or lemon zest of chocolate...is clotted cream and molasses. This sounded like an unlikely comination to me, but I do love molasses so I gave it a try, with my fresh almond milk whipped cream (see below). It was trés magnifique!
I particularly liked the 'hook' of the advert: two astronauts, observing the earth from space. It never gets old, huh? Nope. It kinda makes you wanna-- Break into song? Yep. Yesterday, I spent the day doing mindless work on my computer, catching up on signing all the notes I didn't have time to sign while I was rounding on the inpatient service. It literally took me all day...like fish to eat a fermented herring, I have no idea! I hate seafood, too, and would you ever catch me eating something like that? I don't think so! *That's a deliberate split infinitive. *geek
No beating around the bush. This is hands down the easiest soup I've ever made. What first attracted me to it was the interesting flavour combination: pea and pesto. I had never ever thought about...simmer together for 7 minutes. Discard the spring onions. Purée the rest with a hand blender or in a conventional blender. Add the pesto and give it a few more whirls. It's seriously that easy. Enjoy
The fact that my internship has kept me quite busy means that I've grown very fond of eggs. The versatile little guys have found their way into my breakfasts, lunches, and/or suppers. I eat them...recommends such extras as "chopped ham, diced cooked mushrooms, a few herbs, some sliced artichoke heart..." just go with what you have on hand and what you're in the mood for. You can't go wrong.
