I decided to make pancakes from scratch. After doing this...I have to say I will never buy pancake mixes again. They had more flavor and were very light and fluffy. A very simple recipe that I believe you can keep adding more to. I added some notes of how I prepared this. I have no idea if it would make that much of a difference.
