I was screwing around last night and made this white cheese dip recipe. I added chorizo but for a more "traditional" queso blanco, leave it out. I think traditional recipes use a little half & half instead...adding cheese with adding more beer too, if you want, little by little, and stirring well. You don't have to use the whole can; the more you use, the thinner the dip will be. Heat through. Serve
