eggs. And for once I was not made to feel like a fool, because I can cook me some eggs. My omellete was the prettiest. My egg over medium was the mediumest. My poached egg was the kinda wonky, but...the peppers are just a little soft. Remove from skillet and set aside. Mix eggs, cream, cayenne, salt and pepper. Pour in skillet, cook until just set. Add sauted veggies and cheese, flip and eat

3 bell peppers, any color, cleaned and halved.
4 chicken breasts marinated in a lemon pepper sauce, chopped
6 pats of butter
salt, pepper, chipotle sauce, dried chipotle pepper (powder or crushed)...okay to mix it a bit to check the chicken…but try not to do it too much.
Probably good on rice…I can’t have rice.

I recently tried my hand at butternut squash soup since I had misjudged how much space my chicken would take up in the oven -- no room for baking the squash too, oops. I had the ingredients...it was good...water and frozen Chinese dumplings. Simmer until the dumplings are up to safe temperature for whatever meat is in them. Sigh...makes me realize how bad the cafeteria sandwich was that I just ate..
Indonesian Spiced Chicken (The Essential Asian Cookbook -- from bay books) 3 lb chicken thighs 1 large onion, roughly chopped 2 tsp crushed garlic 1 tsp grated fresh ginger 1/2 tsp ground turmeric...around the edge to loosen. Place a serving plate that's slightly larger than the pie pan on top of the pie pan, and flip upside down. Gently remove the pie pan and cut the flan into wedges to serve
